This is a classic. Simple meringue works for any occasion, while you can easily adjust it to your theme. So if you’re in for a pink & white theme, color and design your meringue as you wish.
Ingredients:
100 gr. egg whites (make sure there is no egg yolk or grease in it)
200 gr. white sugar
Food color of your choice
Preparation:
Put the egg whites and sugar in a Bain-Marie and gently mix until the sugar is completely melted.
Move to a mixer bowl and whisk until very stable (approx. 8-10 minutes).
If you wish to color your meringue, add a couple of drops of food coloring while the mixer is working.
Prepare a pastry bag with a piping tube. If you wish to have color stripes on the meringue, take a knife or any thin object, dip the end of it into the food color and draw lines within the bag. This comes out beautiful!
Move the mass into the bag
heat the oven to 80 degrees celsius
Prepare a baking tray covered with baking paper
Create small “kisses” or any other form you would like
bake for 5-6 hours.
